We treated my mom to Mother's Day brunch on Sunday. I even broke out the china.
I tried a new recipe for stuffed french toast. On my last girl's weeekend, we ate at Mimi's Cafe. Several of the girls ordered stuffed french toast. I combined a few recipes and came up with this. It was pretty yummy!(Just in case you're wondering, I mixed 1 package of cream cheese with about 1/2 c of orange marmalade. I cut a slit in each piece of bread, and stuffed it with the cream cheese mixture. Then I mixed a few eggs with some half and half. I dunked the bread in the egg mixture and cooked it. For the topping, I added blueberries and strawberries to strawberry syrup. Next time, I think I will just top it with berries. The syrup was a little too sweet.)

I couldn't leave Lincoln out of my post. This boy can put away some watermelon!!!!

Did you bake your french toast or did you fry it up like a pancake? Just curious. I'm having a brunch at my house for a high school gal and I was thinking of serving it.
Stephanie, I read your blog regularly! I have to keep up with all of you! Love your treat for your mom. I will have to send you a recipe that one of Bob's students brought in. It is the stuffed french toast that we loved at Disneyworld when we took Maria(age 5). I will try yours too!
I love being able to keep up with Lincoln. What a doll. Love the watermelon picture and also the past strawberry patch pictures. So glad you took him. Good memories. We used to take our kids to an apple orchard across the river from St. Louis....great memories. We went to Fredricksburg a month or so ago....tiny strawberries compared to yours and very sparse!
I think of you often, pray for you, hurt for you. Love your open heart and sharing of your feelings.....that is very good for you and for others. God has the plan....we don't understand often....but He will not ever leave us in our despair. Love, Elaine(Maria's mom)
